About This Wine
For Madison Ridge, blending is the key to maintaining a consistent style from year to year.
So, winemaker James Ceccato sources grapes from all over the “super zone” of South Eastern Australia. This is particularly useful when it comes to making the Madison Ridge Cabernet Sauvignon as some grapes contribute high notes of blackberry and black cherry, while others add more subtle nuances of leather, eucalyptus and dried herbs.
Ceccato describes the 2009 vintage as “elegant, yet intense,” and made to enjoy now. Additional cellar time is not necessary, but the wine should continue to age gracefully through 2014.
Because the tannins already have mellowed, the wine requires no decanting. Better still, it’s extremely food-friendly. So what would the man who made it suggest as a food-pairing partner? Ceccato says lamb would be the perfect dish, served with roasted vegetables. That sounds like a meal that would be easy to love... over and over again, vintage after vintage.

We've tried it with Cabernet Sauvignon (as the recipe calls for), as well as Merlot, Primitivo, Cabernet Franc and Zinfandel... and every time, it turns out delicious! It's best made with an ice cream maker, and if you have such a machine, it's extremely easy to assemble. Enjoy! Get The Recipe
