About This Wine

Some believe that Cabernet Sauvignon should be experienced solo — i.e., sans food.

To that assertion, we say, “Nonsense!” At least, we say that when the Cabernet Sauvignon in question is crafted by Aurelia Cellars. Ever since it started making Cabernet, Aurelia has taken a “food-friendly” approach to the stylistic decisions that are made in the cellar. And for that, our palates are eternally grateful.

With each new vintage, Aurelia always is among the first to release its Cabernet Sauvignon. That’s because the winery crafts it in a non-tannic style, which means it’s ready to drink and enjoy upon release. “Most Cabernet is made with aging in mind,” the Aurelia winemaker acknowledges. “But I’m impatient. I don’t like to wait.”

The 2010 Aurelia Cellars Cabernet is another in a growing string of stylistic success stories. Engaging and accessible, it’s the perfect wine to open and enjoy with filet mignon or roasted lamb — while your other Cabs are aging.

    Great fruity taste. not too sweet, not dry- could go with almost anything.

    I rate this a 1 , my husband a 3 so average is a 2. We paired this with a roasted herb pork and pear salad with balsamic vinaigrette and also Solo on two different days. This wine had a very harsh bitter taste to me and did not go down smoothly at all. For my husband, he said it had a decent initial flavor but was a little on the acidic (harsh) side - it was "ok" but unlikely he would buy this again. I would not buy this again.

    Initially sweet but not too much so. Nicely balanced with a spicy or peppery finish. Very soft/velvety mouthfeel. I tasted this one unaccompanied, but it could go with a variety of foods!

    Excellent flavor. Paired well with Omaha Steaks sirloins. Yum!!

    We had lobster ravioli with a fine Italian sauce, this wine was like drinking silk, soooooooo smooth

    Nose - chocolate / smoke / berries / vanilla. Nice blach cherry under tones. Smooth and full bodied.
