Ever since it started making Cabernet, Aurelia has taken a “food-friendly” approach to the stylistic decisions that are made in the cellar. And for that, our palates are eternally grateful.
With each new vintage, Aurelia always is among the first to release its Cabernet Sauvignon. That’s because the winery crafts it in a non-tannic style, which means it’s ready to drink and enjoy upon release. “Most Cabernet is made with aging in mind,” the Aurelia winemaker acknowledges. “But I’m impatient. I don’t like to wait.”
