Keep in mind that a cheese can be called Parmigiano-Reggiano only if it’s made in the Italian provinces of Parma, Reggio-Emilia, Modena, or certain areas of Bologna or Mantua. The flavor matches perfectly with Cabernet.
For dessert, simply cut a chunk of Parmigiano-Reggiano and enjoy it, sans the pasta and sauce, with still more Quail Hollow Cab.
