About This Wine

That is the “recipe” utilized in making the “Limited Edition” Malbec from Pascal, which is one of the quality-focused wineries of Chile’s Maipo Valley. The valley is nestled between two mountain ranges — the Andes and the Coastal Mountains — and is divided into “sections” by Chile’s capital city of Santiago.

Home to numerous microclimates, Maipo has become a hub for Malbec vineyards. Originally called the “black wine of Cahors,” Malbec is one of five varieties used in the making of red Bordeaux, and has emerged as a star variety in South America. It’s known for producing wines of excellent color and concentration, with juicy berry and black fruit flavors coupled with medium acid and moderate tannins.

That’s an apt description of the 2016 Pascal “Limited Edition” Malbec, a wine that deliciously demonstrates just how engaging Malbec can be when it is given a starring role.

A midseason ripener, it can bring very deep color, ample tannin, and a particular plum-like flavor component to add complexity to claret blends.

    I decanted it for 30 minutes. Honestly, I don't know what it is, not fruitsberries for sure, but the wine emanates something strong and in a way repulsive, though not enough to extinguish my curiosity. It got better in the mouth, first striking with a blast of acidity, some minerality and ...after a while, coffee beans! all coated in chilly pepper that would not? go away for a while. All in all, not bad paired with grilled rib eye steak and veggies.
