About This Wine
Penny Gadd-Coster crafts sparkling wines in the great tradition of France’s Champagne appellation.
There, meticulous care is taken in the cellar to create wines of exceptional balance, and a second fermentation is initiated in the bottle to create the bubbles that define sparkling wine. It’s known as “methode Champenoise,” and it’s the same labor-intensive process that Gadd-Coster embraces in making the Brut for Bonne Vie.
Gadd-Coster landed her first gig in the wine biz at the acclaimed Jordan Vineyards and Winery, and just happened to be there when the sparkling wine-focused J Winery was founded. She was hired as the assistant winemaker, and worked her way up to J’s winemaker. Over the years, she has earned more than 100 medals, mostly since she began specializing in sparkling wine.
