However, the variety does not enjoy similar status in the United States. And that’s a shame, because Sauvignon Blanc is both food-friendly and makes a refreshing aperitif.
Stylistically, Chardonnay — America’s most popular white wine — and Sauvignon Blanc are polar opposites. While California Chardonnay is all about roundness and a buttery mouthfeel, Sauvignon Blanc is defined by its sometimes bracing acidity — the characteristic that makes it so thirst-quenching, not to mention so tasty with shrimp, clams, scallops, crab cakes and other delights from the sea.
California has numerous makers of excellent Sauvignon Blanc, and we would count Ashfield Cellars among them.
