Situated in the Marne department of northeastern France, Hautvillers is home to an ancient Benedictine abbey where, as legend has it, the monk Dom Perignon “discovered” the Champagne winemaking process — the process that puts the bubbles in the bottle — during the 18th century.
Today, Hautvillers is a charming wine-producing village with houses decorated with beautiful forged iron shop signs. It’s also the home of Louis Nicaise, a Champagne grower-producer that has been crafting sparkling wine for four generations.
In 2007, Laure Nicaise-Preaux and her husband, Clement Preaux, assumed control of the family estate and immediately took steps to improve the quality of the wines. Today, their wines are among the best made in Hautvillers. Possessing a fine bead of bubbles, this Brut Rosé is a fresh and creamy wine that serves as a delicious tribute to the man who made Hautvillers — and Champagne — famous.
