Chef de Caves Elisabeth Sarcelet crafts the stylish Castelnau wines, which are characterized by a high percentage of Chardonnay as well as extensive lees aging. Castelnau’s Brut Rosé comes in handy when serving a holiday meal that encompasses an array of flavors. Sarcelet artfully blends Chardonnay with Pinot Noir and Pinot Meunier to create a cuvee with subtlety and roundness.
