Technically, however, “Champagne” should not be used since that name has protected geographical status under European Union law, a rule that has been in place for 30 years. But customs die hard, and to most Spaniards, champaña will always be champaña.
The preferred name for sparkling wine in Spain is Cava, and most of the country’s Cava is produced in Catalonia. There, the three most common grape varieties utilized for crafting bubbly are Xarello, Macabeo and Parellada — the same varieties used by Dignitat for this wine.
Like in other countries, Spain uses sparkling wine for celebrating everything from baptisms to marriages, and from weddings to anniversaries. Dignitat’s rendition — made from grapes grown in Cavas Masachs, south of Barcelona — is medium in body, delightfully bubbly, and a wonderful companion to tapas.
