Mindful of this, Mayfield Cellars is set out to identify distinct micro-climates in which individual varieties would excel. They placed the emphasis not only on the environment, but also on caring viticultural practices embraced by dedicated growers.

The Sauvignon Blanc bottling is a great example of the estate’s multiple-vineyard sourcing and forward-looking approach. Using grapes from three distinct growing areas, the wine is delicate and elegant — a sublime expression of the variety.
